Johnny Sausage is back—and it’s here to stay

Our favourite little restaurant that could, Johnny Sausage, is returning. The much-loved Broome restaurant that was originally here for a good time, not a long time, has undergone some exciting changes during the off-season. And now we’re excited to share them with you.

The biggest one? Johnny Sausage is no longer a pop-up!

That’s right, Broome’s favourite neighbourhood trattoria is now a permanent fixture of The Mangrove Hotel.

Johnny Sausage opened its doors once more on 24 April, welcoming back guests old and new, and you can now enjoy Johnny’s as a staple of your stay at the Mangrove Hotel.

What’s new?

We decided to freshen things up. Johnny Sausage now has a sleeker, new-look website, with all the information you need available so you can find it easily.

We’ve also got an exciting new menu, featuring irresistible Italian fare that’s a celebration of Italy’s rich tapestry of flavours, made with our own special Broome twist.

New on the menu

Begin your meal with fresh antipasti designed to whet the appetite. Discover stone baked pana di campagna. Dive into gooey burrata served on a bed of vine ripened tomatoes, succulent beef carpaccio with pickled shimeji and pine nuts, or mushroom arancini with lime aioli.

Why leave it as a starter? Choose your favourite dishes and make it a meal.

But at Johnny Sausage, we know you’re there for the pasta. The mains have been updated and refreshed, with a revised selection of gorgeous handmade pastas.

Choose from the mouthwatering cacio e pepe, served fresh from a steaming hot pecorino cheese wheel. Or indulge in seafood risotto with Shark Bay prawns, gnocchi in a rich osso buco ragu, and a variety of other exciting options—moreish plates all topped with generous handfuls of reggiano.

If you’re after something bigger, the Secondi menu features larger plates, like duck leg with mushroom puree and a currant jus. Or for the steak lovers, you’ll find MB5+ graded 300g Victorian wagyu, served with vine-ripened tomatoes, triple-fried rosemary potatoes, and horseradish butter.

Or if you prefer to eat as the Italians do, the three-course shared family-style chef selection menu sees you get the house’s favourite picks, each designed to complement the other perfectly.

And that’s just the food.

A revised wine list

The drinks menu has been expanded too, with each label carefully chosen to pair perfectly with what’s on offer. You’ll find an extensive wine list featuring a multitude of Italian wines—drops directly from the old country—alongside a couple of cheeky Australian favourites that you can grab either by the glass, or by the bottle.

Come back to the same stunning view

Now with its new menu, Johnny Sausage promises authentic Italian dining, located at one of Broome’s most beautiful spots looking out over Roebuck Bay. It’s still the same captivating location, with a cosy, inviting atmosphere—perfect for intimate dinners and date nights, long, lazy afternoons with friends, or special family dinners to celebrate major milestones.
